Eggless French Toast

Here's a healthy breakfast that hits the spot every time. Smother it with your favorite fruit or syrup topping and you'll have a meal that's worth repeating.

1/4 c cashews (or other nuts) raw
1/2 c soy milk powder
2 c water
1/2 tsp salt
2 Tbls oil
1-2 tsp sugar
1 tsp vanilla

When thoroughly blended add: 1 c whole wheat flour (or other flour)

Dip bread in batter and place on a hot griddle (350 degrees) that is oiled or sprayed with PAM. Takes only a few minutes to brown, turn and brown other side.

Variation: add 1 tsp of cinnamon

Servings: 12-15 slices
