Moist Date Cake

A sweet moist cake that easily serves a crowd. Bring this to a party or your next get-together.

Date mixture:
3/4 C dates, cut up
1 C and 1 Tbsp boiling water
1 Cube margarine
1 tsp soda

2 eggs, beaten until thick
1 C sugar
1 tsp vanilla
1 1/2 C all purpose flour
1/2 tsp salt
3/4 tsp soda

Cake Topping:
1 C chocolate chips
1/2 C chopped nuts
3 Tbsp white granulated sugar

Place dates, water, margarine and soda in sauce pan. Bring to boil for one minute. Cool. Beat eggs until thick. Add vanilla and gradually add sugar. Add date mixture and then dry ingredients. Pour into greased and floured 9 by 13 pan. Sprinkle cake with chocolate chips, nuts and sugar. Bake at 325° for 30 to 40 minutes or until done.
