Scalloped Potatoes

This recipe offers flexibility in making scalloped potatoes either vegetarian or vegan style.

6 med to lg potatoes, boiled

1 med onion, sliced
1/2 C regular or soy cheese
3 C of either soy or regular milk
6 Tbsp flour
2 tsp of salt

In a bowl whisk together flour, salt and milk. Add to skillet or pan and cook slowly on low heat stirring constantly until mixture thickens (approximately 5 to 10 minutes). Add cheese to mixture and stir well to melt. Layer potato and onion slices in bottom of a casserole dish and pour mixture over this. Bake for 40 to 45 minutes at 350°.
