Family Walnut BallsThis recipe is dairy free and could be easily doubled or tripled and frozen to be used in the future.
1 C finely chopped walnuts
1 C bread crumbs
1/4 to 1/2 C finely chopped onions
1 C grated cheddar rice or soy cheese
1 C milk, rice or soy milk
1 Tbsp driend parsley flakes
1/4 C instant potato flakes
1 tsp baking powder
1/2 tsp xanthan gum, optional
Mix all ingredients in large mixing bowl. Let stand 5 minutes. Form 1/1/2 inch "meatballs" by hand. Place in oiled baking pan and bake at 350° for 30 minutes. Serve with gravy of choice.
