Carrot Roast

Here's an entree that incorporates carrots, corn flakes, walnuts and more into a wholesome dish.

3 C grated carrots

1 1/2 C Corn flakes
1 1/2 C crushed crackers
1/2 C chopped walnuts
1 lg onion, chopped
1/2 C grated cheddar cheese
3/4 C egg substitute (or 3 eggs)
2 C skim milk
1/2 tsp salt
Sage to taste

In a large bowl, combine all other ingredients with sauteed onions. Mix thoroughly. Bake at 350° F for 60 minutes. Serve with your favorite gravy.

Helpful Hint: Your blender or food processor will come in handy for the chopping in this recipe.
