Fresh Apple Cake with Crumb Topping

Can't you smell the apples and cinnamon wafting through the air?

1 C granulated sugar
1/3 C shortening
1 1/2 C unbleached white flour
1 tsp salt
1 egg
2 C grated apples
1 tsp vanilla extract
1 tsp ground cinnamon

Topping:

1/2 C brown sugar
2 Tbsp unbleached white flour
3 Tbsp margarine

With electric mixer, cream sugar and shortening. Add other ingredients and beat until well mixed. Pour into greased 9" x 13" cake pan.

In a small bowl, combine brown sugar, flour, and margarine and mix until coarse. Sprinkle over cake batter. Bake at 375° F for 35 to 45 minutes, or until a toothpick inserted into center of cake comes out clean. No frosting is necessary. If desired, serve warm with Cool Whip or whipped cream.
