Easy Carrot Cake

Topped with or without the cream cheese frosting, this cake is simply scrumptious!

1 C canola oil
2 C granulated sugar
3 eggs
2 C grated carrots
1 20-oz can crushed pineapple, undrained
2 tsp ground cinnamon
2 tsp baking soda
1 tsp salt
1 C grated coconut
2 C unbleached white flour

In a large bowl, combine ingredients and stir until mixed. Easy huh! Pour into greased 9" x 13" cake pan and bake at 350° F for 45 minutes or until a toothpick inserted into center of cake comes out clean. Cool.

Serving Suggestions: This can be served with or without cream cheese frosting.

Cream Cheese Frosting:

1 3-oz pkg cream cheese, softened
1 Tbsp milk
1 tsp vanilla
Dash of salt
1 1/2 C powdered sugar

In a small bowl, blend cream cheese, milk, vanilla, and salt. Gradually add sugar, beating until frosting is smooth.
