Mud Pie

Real kid pleaser...just remember to keep it in the freezer!

1 1/4 C chocolate cookie crumbs
1/4 C granulated sugar
1/4 C margarine, melted
1/2 gal [your favorite] ice cream, softened
1 12-oz jar chocolate fudge ice-cream topping

In a medium bowl,  mix cookie crumbs, sugar, and melted margarine. Press into 9" spring form pan and chill in freezer. Slightly soften a half-gallon of your favorite ice cream. (Mocha Almond Fudge or Cookies and Cream are wonderful in this dessert.) Remove spring form pan from freezer and spread ice cream evenly over crust. Place back in freezer and let set till hard.

When it's time to serve, remove the Mud Pie from the freezer and top with chocolate fudge ice-cream topping. Use the whole jar and spread evenly over ice cream. Take the sides off of the spring form pan and slice into 10 pieces. Garnish with whipped cream and slivered almonds, if desired.
