Wheat Berry DessertThis innovative recipe uses a whole grain to give it texture and nutrition.
1 1/2 C uncooked wheat berries
4 C thawed Cool Whip (or 1 8-oz container)
1 8-oz pkg cream cheese, softened
1 C sour cream
2 3.4-oz pkg instant vanilla (or lemon) pudding mix
1 20-oz can pineapple chunks, undrained
In a medium pan, cook wheat berries over medium heat until tender but chewy, keeping covered with water at all times. Drain and cool.
In a large bowl, combine remaining ingredients, adding wheat berries last. Refrigerate in large serving bowl until ready to serve. Garnish with strawberries, if desired.
