Soybean SpreadDelicious on all types of crackers and canapes, mmm...good!
2 Tbsp canola oil
1 sm onion, finely chopped
1 clove garlic, minced
2 Tbsp finely-chopped fresh parsley
2 C cooked, ground soybeans
1 tsp ground oregano
1 Tbsp soy sauce
1/3 C fat-free Miracle Whip (or mayonnaise)
In a small skillet, saute onion and garlic in oil. Remove from heat and add parsley.
In a medium bowl, add ground soy beans, oregano, soy sauce, mayonnaise, and sauteed mixture. Mix well. Refrigerate until ready to serve. This keeps well in the refrigerator.
Serving Suggestion: Use as a spread for crackers or sandwiches.
Servings: 2 cups (approximately 16 servings)
