Carrot Roast

A wonderful and healthy recipe to serve a crowd either at home or at a social gathering.

1 C ground raw carrots

1/2 C ground walnuts
1/2 C grated cheese
2 Tbsp oil
1/2 C tomato sauce
2 Tbsp ground onion
2 beaten eggs
1 C toasted dry bread crumbs
salt to taste
1 C tomato sauce

Combine and mix well all the first 9 ingredients. Pour into buttered casserole. Set casserole in pan of water and bake at 350° for 50-60 minutes. Remove casserole from water and bake for 10 minutes more. Remove from oven and pour 1 cup of tomato sauce over the top.
