Carrot Roast

Simple and healthy entree to try soon. Recipe can be halved for a smaller loaf.
 

2 C toasted bread crumbs
2 C grated carrots
2/3 C peanut butter, 
2 C of tomato juice
4 eggs, well beaten
2 tsp salt
2 tsp sage
1/4 C margarine
1/4 C chopped onions

Blend together 2/3 cup of peanut butter with 2 C of tomato juice and set aside. Saute onions with margarine until transparent. Mix all ingredients together and pour into an oiled 10 inch casserole. Bake at 350° for 1 hour.
