Cranberry Pudding

Fabulous cranberry pudding topped with whipped cream! Make vegan or vegetarian.

1 C sugar

2 C flour
1/2 tsp salt
2 tsp baking powder
1/3 C shortening
2 C raw whole cranberries
1 C milk or soy milk

Sift dry ingredients together. Blend shortening into dry ingredients until you have a fine texture. Add cranberries and soymilk and mix. Bake at 350° for 40 minutes.


1 C butter
1 1/2 C sugar
1 1/2 C whipping cream

Whip together ingredients. Top warm pudding with sauce and serve.
