Chocolate Mouse Pie

Having to pass up mouse because of dairy? No, more...make this incredibly rich and smooth pie.

1- 9" crumb crust

1- 12 oz pkg chocolate chips (semi sweet or milk)
1- 16 oz pkg silken tofu
2 Tbsp powdered sugar, optional
2 tsp vanilla extract

Melt chocolate chips in microwave on medium power, 1 to 3 minutes, stirring occasionally until smooth. Puree tofu in food processor. Add melted chocolate and process until completely blended, scrapping down sides. Spoon into pie shell. Chill until set, approximately 1 hour. Let stand at room temperature, 15 minutes uncovered, before serving.
