Cornflake RoastWonderfully simple recipe...great for the beginning cook.
2 Tbsp Ener-G egg replacer
1/2 C water or substitute 4 eggs, beaten
1 onion, finely chopped
1/4 C margarine, softened
1 box Mori-Nu extra firm tofu, crumbled
7 C cornflakes
4-5 Tbsp beef-style seasoning
1/2 C chopped walnuts or pecans
1/2 C soy milk
In a small bowl, combine egg replacer and margarine in a large bowl. Mix rest of ingredients together well. Spread evenly in a sprayed 8 by 8 inch casserole dish uncovered at 350° for 1 1/2 hours.
