Vegan Pumpkin Cookies Deliciously sweet vegan cookies that are easy to make.

1 C brown sugar

1 C white sugar
3/4 C shortening, butter or oil
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp salt
1 tsp baking powder
3 1/2 C flour
2 C ( 15oz can) pumpkin

In a large bowl, cream sugars and oil. Mix dry ingredients in a separate bowl. Add dry ingredients to sugar/oil mixture and then add pumpkin. Drop by tablespoons onto a cookie sheet. Bake at 400° for 10 minutes. Let cookies cool.

Frosting:

1/3 C margarine
3 C sifted confectioner's sugar
3 Tbsp soy milk
1 1/2 tsp vanilla or maple syrup

Blend together margarine and sugar.  Stir in soy milk, vanilla or maple syrup until smooth. Spread or drizzle over cooled cookies.
