Donna's Delicious Tofu Loaf A delicious vegan loaf served with mashed potatoes and gravy.

1 pound firm, water-packed tofu
1/4 C olive oil
1 onion, chopped
1 bell pepper, chopped
1/2 C mushrooms chopped
3-4 C Grape-Nuts flakes
1/2 C pecan meal, or more as desired
1 C plain soymilk or more for desired consistency
Sage, garlic powder, McKay's No MSG Chick-Style Seasoning, Bragg's Liquid Aminos to taste.

Drain tofu. Mash or crumble in a mixing bowl. Sauté the onion, bell pepper, and mushrooms in the olive oil. Add rest of ingredients and stir until well blended.

Place in an 8" x 8" baking dish or loaf pan. Cover and bake at 325° F for 45 minutes. Uncover and continue baking until it reaches the desired brownness. Slice and serve.
